How Invert Sugar Works Invert sugar belongs to a class of substances known as sweeteners. It is a mixture of equal parts of d-glucose and d-fructose produced by the hydrolysis or inversion of sucrose. Invert sugar is approximately 1.25 times sweeter than regular sugar and 1.7 times sweeter than glucose, which helps enhance the flavor of cough syrups and mask the bitterness of medicines.
